Lemon Blueberry Bread

Take a bite of this fruit-forward Lemon Blueberry Bread while also taking a step toward your wellness goals! Vital Proteins Collagen Peptides help support healthier hair, skin, nails, and joints. 
Ingredients
  • 1 ½ cups Blanched Almond Flour
  • ¼ cup Coconut Flour
  • ¼ cup Tapioca Starch
  • 2 scoops Vital Proteins Collagen Peptides
  • 1 tsp Baking Soda
  • ¼ tsp Salt
  • 4 Eggs (whisked)
  • ½ cup Coocnut Oil (melted)
  • ⅓ cup Maple Syrup
  • 3 Tbsp Lemon Juice & Zest (about 2 lemons)
  • 1½ cups Fresh Blueberries
  • Coconut Butter (for glazing)
Instructions
  1. Preheat oven to 350°F
  2. Combine almond flour, coconut flour, tapioca starch, baking soda, Collagen Peptides and salt in a bowl.
  3. In a separate bowl, combine melted coconut oil, whisked eggs, maple syrup, lemon zest and lemon juice.
  4. Pour wet ingredients into the dry ingredient bowl and gently fold to combine.
  5. Grease a loaf pan with coconut oil and pour in about  ⅓  of the batter, then add a layer of blueberries.
  6. Pour in another ⅓ of batter, another layer of blueberries, and finally, top with the remaining mix.
  7. Bake for 25 minutes until lightly golden on top, then cover with foil and bake for another 20-30 minutes. Test the middle of the bread with a knife to make sure the center is not wet.
  8. Take the bread out of the oven and cool before removing from the loaf pan.
  9. Gently remove the loaf and melt down coconut butter, pouring it on top
  10. Enjoy!
